Pancakes on Christmas morning was a pretty long standing tradition when we were kids. My brothers and I would make the pancakes, once we had opened all the presents. One year, when we were grown and living away from home, Stephen received a griddle as a Christmas present – the pancakes were sure good that year!

Good basic pancake recipe.

Serves: 8 pancakes
  • 1½ cups flour
  • 3½ teaspoons baking powder
  • ¾ teaspoon salt
  • 2 tablespoons sugar
  • 1 egg, beaten
  • 1¾ cups milk
  • 3 tablespoons melted butter
  1. Combine flour, baking powder, salt and sugar together in a large bowl.
  2. Combine egg, milk and butter. Add to the flour mixture and beat until smooth.
  3. Drop by large spoonfuls or ¼ cup measure onto hot griddle.
  4. Cook until the top is full of bubbles, then flip and cook the other side.
  5. Serve with butter and syrup.

    I found this recipe some years ago here and use it all the time. It’s easy to make and has the box pancake mixes beat hands down. I actually think it is as good as the mix we used when I worked at Howard Johnson’s.

    this is my family’s favourite pancake recipe – I make them all the time, and no other type tastes as good
