Steak and Onion Stir Fry

This is a great idea for a weekday “meal in a hurry”: it’s really quick to make, inexpensive, nutritious, and it’s really good too.

Steak, onions, mushrooms, peas and green beans all stir fried together.

  • ½ pound round steak
  • 2 small unpeeled potatoes
  • 2 small onions
  • 1 clove garlic
  • ¼ pound fresh mushrooms
  • 1 cup frozen peas
  • 1 cup fresh or frozen green beans
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • ¼ teaspoon thyme
  • Salt and pepper
  1. Slice meat into bite size strips. Scrub potatoes and cut into ½ inch wedges. Slice onions and separate into rings. Mince garlic. Thickly slice mushrooms. Measure out the peas. Slice fresh beans or measure out frozen beans.
  2. In a large skillet or wok heat oil and stir fry the meat for about 2 minutes. Add the butter, heat to melt it, and then add the potatoes. Stir fry until they start to brown, about 4 minutes.
  3. Add the remaining ingredients and stir fry until the vegetables are heated through and the meat is done, about 4 more minutes. Makes 2 to 4 servings.
